Pressure Canning: The Next Level of Home Preservation
While water bath canning handles high-acid foods beautifully, many of the most useful pantry staples — green beans, corn, carrots, chicken stock, chili — are low-acid and require pressure canning. The higher temperature (240 F / 116 C) achieved under pressure destroys botulism spores that a boiling water bath cannot.
Water Bath vs. Pressure Canner
- Water bath: Reaches 212 F (100 C). Safe for high-acid foods only (pH below 4.6). Simpler equipment.
- Pressure canner: Reaches 240 F (116 C) at 10-15 PSI. Required for low-acid foods. More equipment but more versatile.
- Important: A pressure canner is not the same as a pressure cooker. Canners have a dial or weighted gauge, a locking lid, and are tested to maintain consistent pressure.
Foods That Require Pressure Canning
Any vegetable without added acid (green beans, corn, carrots, peas, potatoes), all meats and poultry, stocks and broths, soups and stews, and combination recipes like chili or vegetable soup.
Basic Procedure
Prepare food and fill hot jars with specified headspace. Wipe rims and apply lids. Place jars on the rack inside the canner with 2-3 inches of hot water. Lock the lid, heat until steam vents for 10 minutes, then close the vent and bring to the prescribed pressure. Start timing when correct pressure is reached. Maintain pressure throughout processing. Turn off heat, let pressure drop naturally, wait 10 minutes, then open.
Safety Rules
- Always use tested recipes — never invent your own pressure canning recipes
- Have dial gauges tested annually for accuracy
- Adjust pressure for your altitude
- Never force-cool the canner (running cold water, removing the weight early)
- If in doubt about any jar, do not eat it — "when in doubt, throw it out"
