- Pack tightly into a clean jar, pressing down after each handful so brine rises above the cabbage.
- Place a saved outer leaf on top as a cover, then add a weight to keep everything submerged.
- Cover loosely (not airtight — CO2 needs to escape) or use an airlock lid.
- Place on a plate to catch overflow. Ferment at room temperature (60-75 F / 15-24 C).
Fermentation Timeline
Day 1-3: Bubbles appear as fermentation begins. Day 4-7: Flavor becomes noticeably tangy. Week 2-3: Sourness deepens and flavor becomes more complex. Week 4+: Full sour flavor develops. Taste regularly and refrigerate when it reaches your preferred level of sourness.

- Caraway kraut: Classic German style — add 1 tablespoon caraway seeds
